Ingredients

10 oz. chocolate, 70% cocoa, shaved or cut

½ cup walnut pieces, toasted

½ cup pecan pieces, toasted

½ cup almond slices, toasted

Directions

Place chocolate in a bowl over a double boiler, heating on a low flame while stirring until chocolate is 85% melted. Remove from heat and stir until smooth.

Mix in the toasted nuts.

Spread mixture evenly on a parchment paper-lined sheet pan and chill in the refrigerator until set, about 30 minutes.

Break into pieces and serve, or place in ziplock bags, label, date and store in your freezer for up to three months.

Chef’s Notes

To toast nuts, scatter on a baking sheet and place in a 300°F oven or toaster oven for about 5 to 10 minutes until lightly golden. Add other varieties of nuts, like pistachios, or unsweetened dried fruits or even flax seeds to create variations.
