Moroccan Chickpea and Carrot Tagine

Overview

This sweet and spicy tagine is based on a simple Moroccan stew. Avoid cutting carrots by using packaged, cut carrots. Chickpeas are chockfull of healthy dietary fiber, which can help you feel full and better able to maintain a healthy weight. Turmeric contains curcumin, an antioxidant shown in large amounts to have anti-inflammatory properties. Serve this tagine over nutrient-rich brown rice, quinoa or whole wheat couscous with a dollop of plain, low-fat yogurt.

Ingredients

1 Tbs. olive oil

1 small yellow onion, chopped

2 tsp. minced garlic, fresh or from a jar

Kosher salt, to taste

1 Tbs. mild curry powder

1 (15-ounce) can diced tomatoes

2 (15-ounce) cans chickpeas, with liquid

¼ cup golden raisins

3 cups baby carrots

Directions

Heat oil in a large skillet over medium heat.

Add onion and cook until soft, about 5 minutes. Add garlic, salt and curry powder. Cook, stirring often, until the curry is fragrant, about 1 minute.

Add tomatoes, chickpeas, raisins and carrots. Stir to combine and bring to a simmer. Reduce heat to low, cover, and cook for 10 minutes.

Remove lid and cook about 10 minutes more, stirring occasionally, or until almost all the liquid is gone.
